Asparagus Chicken One Pot Pasta

Ingredients

  • 4-5 chicken thighs, diced

  • 1-2 bunches asparagus, trimmed and diced

  • 1 pack of pasta

  • 3-4 cups of chicken broth (or some combination water)

  • 2 cloves garlic, minced

  • 1 tbsp lemon juice

  • parmesan, grated

  • 1/4 cup of milk

  • 1/4 cup of heavy cream (or half and half or just more milk)

  • olive oil

  • herbs (oregano, basil, etc.)

  • salt and pepper

Directions

  1. Heat a big wide pot.

  2. Add olive oil and fry the chicken until browned. Add the herbs and salt and pepper.

  3. Add the noodles and chicken broth. Bring to a boil.

  4. Boil till noodles are mostly cooked. You want it to not get too dry but not soaking wet, so adjust the heat and the lid accordingly. Add more water if needed. The goal here is to have the pasta starch thicken the remaining liquid, not a roux or reduced milk fat.

  5. Add the asparagus and cook until tender.

  6. Reduce the heat and add the heavy cream, milk, lemon juice, and cheese.

  7. Cood till desired texture and season to taste.
