Butter Bean Ragout
Ingredients
2 small cans butter beans (lima beans), drained
1/2 can corn kernels, drained
1 onion, chopped
1 red pepper, chopped
1 carrot, chopped
1 handfull frozen brussel sprouts
1 handfull frozen squash
1 handfull frozen spinach
3-6 tbsp cilantro jalapeno pesto (from Red Apron)
lemon juice
olive oil
salt and pepper
chives, parsley, and other herbs
Directions
Fry the onion, pepper, and carrot in a wide pan with olive oil.
Add basically everything else except the beans. Cook till veggies are soft.
Add the beans. Cook for a short time more and season.
