Butter Bean Ragout

Ingredients

  • 2 small cans butter beans (lima beans), drained

  • 1/2 can corn kernels, drained

  • 1 onion, chopped

  • 1 red pepper, chopped

  • 1 carrot, chopped

  • 1 handfull frozen brussel sprouts

  • 1 handfull frozen squash

  • 1 handfull frozen spinach

  • 3-6 tbsp cilantro jalapeno pesto (from Red Apron)

  • lemon juice

  • olive oil

  • salt and pepper

  • chives, parsley, and other herbs

Directions

  1. Fry the onion, pepper, and carrot in a wide pan with olive oil.

  2. Add basically everything else except the beans. Cook till veggies are soft.

  3. Add the beans. Cook for a short time more and season.
