Cajun Shrimp Quinoa Bowl

Ingredients

  • 1 cup quinoa

  • 2 cups broth

  • baby kale or some other greens

  • 1 package frozen shrimp (400-500g)

  • cherry tomatoes

  • avocado

  • pickled onions

  • red pepper or other veggies sliced thin

  • optional others (scalions, cilantro, edamame, etc.)

  • cajun seasoning (paprika, cayenne, garlic powder, onion powder, salt, pepper)

  • olive oil

  • sour cream and lime based sauce

Directions

  1. Cook the quinoa in the broth for 15 minutes, allow to dry out. Mix in the greens roughly chopped.

  2. Toss the shrimp in olive oil and cajun seasoning, fry in a hot pan.

  3. Add olive oil and cherry tomatoes and salt (optional balsamic, vinegar, broth, wine, or some liquid to deglaze).

  4. Serve all in a bowl, top with avocado, pickled onions, and sour cream and sauce.
