Chocolate semifreddo

Ingredients

  • 20g 95% dark chocolate

  • 10g cocoa powder

  • 15g coconut oil.

  • 120g heavy cream

Directions

  1. In a bowl combine dark chocolate, cocoa powder, and coconut oil.

  2. Melt it all over warm water and stir, to get a smooth paste.

  3. Add one egg and a little of your favourite liquor. It’s important to whisk thoroughly, so that the egg won’t scramble and so that the cream will be light and creamy. I added some brandy to the mixture.

  4. Whisk it until it becomes foamy.

  5. Let cool. Take it off the heat when it has the right consistency. It should be like thick custard, as shown here.

  6. Whip heavy cream to stiff peaks. Fold together.

  7. Fill ramekins and cover and freeeze 4 hours.
