Cream of Broccoli

Ingredients

  • 4 tablespoons Butter or olive oil

  • 1 generous teaspoon chopped garlic or 1 to 2 garlic cloves

  • 0.5 cup of onions - 1 medium onion

  • 3 tablespoons all-purpose flour

  • 500 grams broccoli – 2 medium broccoli, chopped

  • 3-4 cups of chicken or vegetable broth

  • 2 cups whole milk

  • 0.5 cup cream

  • 1-2 teaspoon dry oregano

  • pinches of chives, parsley, basil, nutmeg, msg

  • Salt and pepper

Directions

  1. Sauté butter, onions and garlic in a sauce pan.

  2. Add the flour. Stirring often sauté for 2 minutes on low heat.

  3. Add the broth and broccoli.

  4. After 2 minutes, take a few small florets out for texture later.

  5. Cook for another 8-10 minutes until broccoli is cooked.

  6. Blend with immersion blender.

  7. Add milk, cream and seasoning.

  8. Bring back to a simmer.
