Creamy Quinoa Lime Salad
Ingredients
1 cup quinoa
2 cups broth (or water)
1 red pepper, diced
cherry tomatoes, halved
green or red onion, sliced real small, to taste
1 can black beans, drained
1/2-1 can corn, drained
1/2-1 cup sour cream (replace some with mayo for a richer sauce)
lime juice
texmex seasoning, chipotele powder, pepper sauce, or whatever mexican adjacent seasoning you’d like
Directions
Simmer quinoa with broth and some salt in a pot with the lid on for 15 minutes. Remove from heat for 10, then fluff up.
Cut the peppers, tomatoes, onion, and any other veggies you want.
Drain the beans and corn.
Mix everything together and season to taste. Chill in the fridge.
