Fruit clafoutis

Ingredients

  • pit fruit, cut

  • 40g whole wheat flour

  • 40g almond flour (use 80g wheat flour if you want more carbs)

  • 40g sugar or sweetener

  • 2 eggs

  • vanilla

  • 240g (1 cup) milk

  • 1 tbsp brandy

  • 2 tbsp melted butter

  • salt

Directions

  1. Grease a pie pan. Put parchment on the bottom to prevent sticking.

  2. Fill pan loosely with pit fruit or dry berries. Peaches, apricots, blueberries, cherries, etc. all work well.

  3. Wisk together all other ingredients until a lumpy batter. Pour over fruit.

  4. Bake at 350 till puffy with a golden edge.
