Granola (2nd type)

Ingredients

  • 4 cups old fashioned oats, raw

  • 1 1/2 cups nuts and seeds (pecans, toasted coconut, almonds, flax seeds)

  • 1 tsp salt

  • 1/2 tsp cinnamon

  • 1/2 cup coconut oil, melted

  • 1/2 cup maple syrup or honey

  • 1 tsp vanilla

  • 2/3 cup dried fruit (blueberries, dates minced)

Directions

  1. Preheat oven to 350.

  2. Heat the coconut oil and syrup/honey in the microwave.

  3. Mix everything except the fruit and delicate stuff that can’t be cooked.

  4. Bake on a sheet pan for 21-24 minutes.

  5. Add the remaining ingredients and toss.

  6. Cool and break up and store in a dry container.
