Guiness Beef Stew
Ingredients
500-800g stewing beef, small cubes
1/3 cup flour
1/4 cup olive or vegetable oil
3 cloves garlic, minced
3 tbsp tomato paste
1-3 tsp Worcestershire sauce
1-2 tbsp sugar
1 tsp cocoa powder
1/2 tsp espresso powder
1 tsp onion powder
1-2 tsp thyme, dried
1 large can Guinness or other stout beer
2 cups beef broth
1 large onion, cut
Carrots, potatoes, beets, rutabaga, parsnips, button mushrooms, cut into cubes
1 tbsp balsamic vinegar
Directions
In a bowl, combine beef with salt and pepper and some flour. Set aside.
Heat the oil on saute in the Instant Pot. Add tomato paste, and all the seasonings and sauces. Cook until fragrant. Add the flour and mix until a dry paste.
Add the beer and broth and bring to a boil. Scrape the bottom and wisk well.
Add the beef and high pressure for 22 minutes, 5 minute release.
Add all the veggies and high pressure for 10-12 minutes, then pressure release.
Add vinegar. Season. Boil if too thin.
Serve with horseradish or sour cream.
