Hunan Chicken Stir Fry
Ingredients
1 package ground chicken or chicken thighs cut
bell pepper
zucchini
broccoli
onion, sliced
1 tbsp rice wine or mirin
1 tbsp graulated sweetener
1 tbsp ginger, minced
1-2 tbsp garlic, minced
2 tbsp sambal olelek
2 tbsp oyster sauce
1/4 cup soy sauce (optional replace part with dark soy)
1/2 cup chicken broth
sesame oil
2 tbsp corn starch
Directions
Mix all sauce ingredients. Set corn starch in water on a side bowl.
Fry chicken on high heat, and set aside.
Fry onions in oil. Add zucchini, then the rest of the veggies.
Add back the chicken. Then add the sauce. Boil till reduced a bit and veggies tender but crunchy. Add corn starch and serve.
