Impossible Shepherd's Pie

Ingredients

  • 4-6 cups mashed potatoes, carrots, or other root vegetables

  • 1 cup onions, chopped

  • 1 cup carrots, chopped (or other similar vegetables)

  • 1 package Impossible Meat or other such ground meat or alternative

  • 1 cup frozen peas

  • Other filling such as frozen spinach, corn, etc.

  • 2 cloves garlic, minced

  • 2-3 tablespoons tomato paste

  • 1 tablespoon Worcestershire sauce

  • 1 1/2 teaspoons dried thyme, Note 2

  • 2 tablespoons flour

  • 3/4 cup vegetable stock or broth

  • 1/4 cup wine to deglace (optional, replace with stock)

  • tyhme and rosemary

  • olive oil

  • gratet parmesan to top (optional)

Directions

  1. Prepare mashed potatoes or root vegetables in advance.

  2. Heat oil in large skillet. Add onions and carrots. Sauté for 5 minutes.

  3. Add ground meat and chop it up into small pieces. Stir in garlic, rosemary, thyme, salt, pepper, tomato paste, Worcestershire sauce. Saute until meat is browned.

  4. Add flour, stir for 2 minutes.

  5. Add broth and wine, frozen peas and veggies. Stir to combine and simmer to thicken. Season to taste.

  6. Put filling layer on the bottom of a casserole dish, mashed potatoes on top. Sprinkle with parmesan cheese.

  7. Bake at 375F for 20 or so minutes until heated through and cheese is crispy. Broil if desired.
