Lasagna

This makes one large pan, and two 23x17cm freezer pans.

Ingredients

  • 8-10 zucchini, sliced on mandolin and salted

  • 2 packages ground chicken, seasoned and fried

  • 3 small or 1.5 large ricotta

  • 2 eggs

  • 2 packages frozen spinach

  • 3 small or 1.5 large bags shredded mozzerella

  • 1 package lasagna noodles, 500g

  • vegetables to fry, mushrooms carrots peppers onions etc.

  • 3-4 large jars of Rao’s maranara sauce

Directions

  1. Slice zucchini on a mandolin. Salt them and lay them flat on towels, in fridge if possible.

  2. Mix ricotta, eggs, and melted spinach. Get all the water out of the spinach. Salt.

  3. Fry chicken with herbs.

  4. Cut up veggies and fry.

  5. Boil pasta according to package, cool with water.

  6. Layer as follows. Zucchini, sauce, chicken, cheese, noodles, ricotta, zucchini, sauce, veggies, cheese, noodles, sauce, cheese.
