Lemon Shallot Salmon

Ingredients

  • Salmon, skin on or off

  • Lemon juice

  • Olive oil

  • Salt and pepper

  • Dijon

  • 1 shallot, sliced thin

  • White wine

  • Sweetener (maple syrup)

  • Herbs like basil and parsley

Directions

  1. Mix all ingredients in a bowl. Lay the salmon flesh down and cover. Marinade in the fridge an hour or so.

  2. Place tighly in a baking dish, or in a tight foil package, but open and uncovered. Cover with marinade, layering the shallots on top of the fish.

  3. Bake at 375 until 145 F in the thickest part.
