Lemon Shallot Salmon
Ingredients
Salmon, skin on or off
Lemon juice
Olive oil
Salt and pepper
Dijon
1 shallot, sliced thin
White wine
Sweetener (maple syrup)
Herbs like basil and parsley
Directions
Mix all ingredients in a bowl. Lay the salmon flesh down and cover. Marinade in the fridge an hour or so.
Place tighly in a baking dish, or in a tight foil package, but open and uncovered. Cover with marinade, layering the shallots on top of the fish.
Bake at 375 until 145 F in the thickest part.
