Mediterranean Cauliflower Rice
Ingredients
1 cauliflower, riced (4-6 cups)
1 onion, minced
2 tbsp butter
garlic
ginger
1/2 tsp coreander
1/2-1 tsp cumin
1/4 tsp tumeric
1/4 tsp pepper flakes or cayenne pepper
1 cup chicken broth
1/2 cup almonds, sliced and toasted
1/4-1/2 cup currants or raisins
1 can chickpeas
lemon juice
Directions
In a large nonstick pan, fry onion with butter. Add garlic and ginger and spices, cook for one minute.
Add all other ingredients except the lemon. Cook uncovered on medium to medium high heat, stirring often.
When dry, add lemon. Serve with merguez or andouille sausage.
