Oats and Fruits Power Muffins
Ingredients
3/4 cup (180g) plain Greek yogurt
2 large eggs
1/3 cup (85g) creamy almond butter
1/3 cup (75g) honey
2 teaspoons pure vanilla extract
2 cups (160g) old-fashioned whole rolled oats*
1/2 cup (50g) almond flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup of fruits (blueberries, apples, raspberries)
handful of sliced almonds for topping (optional)
Directions
Preheat oven at 325F convection.
Mix wet ingredients in medium bowl.
Mix dry ingredients in large bowl.
Fold in wet ingredients into the large bowl.
Oil muffin tins and fill 12 muffins.
Bake for 20 minutes.
