Peanutbutter stirfry

Ingredients

  • 1/2 cup peanutbutter, or more

  • 2-3 tbsp soy sauce

  • 1-2 tbsp dark soy sauce, optional

  • 1 tbsp garlic, minced

  • 1 tbsp ginger, minced

  • 2-3 tsp sambal olek

  • 1 cup chicken stock

  • 1 tbsp vinegar

  • 1-2 tbsp fish sauce

  • 1 tbsp sweetener, or more

  • ground chicken

  • veggies like peppers, beans, mushrooms

  • corn starch

Directions

  1. Premix all sauce ingredients to taste.

  2. Fry chicken in a hot pan or wok, set aside.

  3. Fry veggies in oil.

  4. Add chicken back in. Add sauce, till bubbling. Thicken with corn starch.

  5. Serve over noodles or rice or not, garnish with minced saled peanuts.
