Pickled Onions

Ingredients

  • 1 cup vinegar (plain, cider, etc)

  • 1 cup water

  • 2 tbsp salt

  • 1 cup sugar

  • 1 large red onion, halved and cut into thin slices

  • 1-2 jalapenos, sliced thin into rounds

  • Optional flavorings, cut scallions, herbs, etc..

Directions

  1. Equal parts sugar, vinegar, water, plus some salt.

  2. Boil on the stove until melted.

  3. Place onions, jalapenos, and optional flavorings in a mason jar. Pour hot liquid over the top. Let cool to room temperature, then refrigerate.
