Quinoa Chicken One Pot
Ingredients
1 lb broccoli, chopped (1-2 crowns)
2 bell peppers, chopped
3 garlic cloves, minced
1-2 tbsp olive oil
1/2 tsp cumin
ground black pepper, red pepper flakes (optional)
1 onion, diced
1 large carrot, shredded
4-6 boneless chicken thighs, cubed
1 tbsp olive oil
1 tsp oregano dried
1/2 tsp cumin
ground black pepper
1 1/2 cups quinoa, uncooked
3 cups chicken broth
vinegar (balsamic, apple cider, red wine, etc.)
Directions
Heat a large pot or skillet. Add olive oil and saute garlic for a minute or so.
Add broccoli, bell pepper, cumin, black pepper and red pepper flakes. Cook for 5 minutes, stirring occasionally. Transfer to a bowl and set aside.
Return pot to the stove and add more oil. Saute carrot and onion for 3 minutes, stirring occasionally. Add chicken, oregano, cumin, salt, black pepper and red pepper flakes. Saute till chicken is mostly cooked.
Add quinoa and stock. Bring to boil and simmer for 20 minutes.
Add back vegetables and stir. Season with salt, pepper, and vinegar to taste.
