Ratatouille
Ingredients
2-4 zucchini, cubed
1 large or 2 small egg plant, cubed
2 onions, sliced thin
2 peppers, sliced thin
garlic, minced
3 small cans of tomatoes, or 1.5 large
Tomato paste
White wine (optional)
olive oil
herbs like oregano, basil, rosemary, parsley, pepper flakes
Directions
Toss the cubed zucchini and egg plant in oil and salt and roast at 425 degrees.
Fry the onion and pepper in lots of olive oil. Add garlic and tomato paste. Deglaze optionally with white wine.
Add diced tomato and simmer. Add roasted vegetables. Simmer until reduced.
Serve with meat balls.
