Scones

Ingredients

  • 2 cups flour (pastry flour, or all-purpose)

  • 1/4 cup sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, cold (frozen if possible)

  • 1 cup blueberries (fresh or frozen) or other fillings

  • 1/2 cup milk

  • 1 egg

  • 1 teaspoon vanilla extract

Directions

  1. Heat oven to 400°F. Line a baking sheet with parchment paper.

  2. In a large bowl mix together flour, sugar, baking powder, and salt.

  3. Grate the butter into the flour mixture and mix until the butter is evenly distributed, or cube it into small pieces.

  4. Add the blueberries or other fillings and mix until evenly distributed.

  5. In a measuring cup or bowl, whisk together the milk, egg, and vanilla extract.

  6. Pour the wet ingredients into the dry ingredients and mix until a shaggy dough ball forms.

  7. Form the dough into a disk on a floured surface and cut into 8 wedges, or roughly 8-10 scones.

  8. Brush the tops with heavy cream, egg wash, or milk. Sprinkle with sugar.

  9. Bake for 15-20 minutes, until the edges are brown.
