Thai Curry Lentil Soup
Ingredients
2 tablespoons olive or coconut oil
1 cup onion, chopped
1 cup carrot, chopped
2-3 cloves of garlic, minced
1 tablespoon fresh ginger, shredded
3 tablespoons tomato paste
4-6 tbsp Thai red curry paste
1 cup red lentils, dry
4 cups water (or some broth)
1 cup coconut milk
3 tablespoons lime juice
Directions
Set the instant pot to saute and fry the oil, onions, and carrots. Add garlic, ginger, and tomato paste.
Add the lentils and stock/water. Set on high pressure for 8-10 minutes and natural pressure release.
Add lime juice and coconut milk. Add optional herbs like parsley or cilantro. Hand blend if desired.
