Thai Curry Lentil Soup

Ingredients

  • 2 tablespoons olive or coconut oil

  • 1 cup onion, chopped

  • 1 cup carrot, chopped

  • 2-3 cloves of garlic, minced

  • 1 tablespoon fresh ginger, shredded

  • 3 tablespoons tomato paste

  • 4-6 tbsp Thai red curry paste

  • 1 cup red lentils, dry

  • 4 cups water (or some broth)

  • 1 cup coconut milk

  • 3 tablespoons lime juice

Directions

  1. Set the instant pot to saute and fry the oil, onions, and carrots. Add garlic, ginger, and tomato paste.

  2. Add the lentils and stock/water. Set on high pressure for 8-10 minutes and natural pressure release.

  3. Add lime juice and coconut milk. Add optional herbs like parsley or cilantro. Hand blend if desired.
