Thai red curry

Ingredients

  • 2-4 chicken thighs, boneless skinless and cut

  • 1 tbsp garlic, minced

  • 1 tbsp ginger, minced

  • coconut oil, or other plain oil

  • red peppers, cut into strips

  • green beens, cut into chunks

  • onions, sliced

  • red curry to taste

  • 1 can rich coconut milk

  • chicken broth

  • fish sauce

  • lime

Directions

  1. Fry chicken thighs with garlic and ginger in oconut oil. Put aside.

  2. Fry red peppers, green beans, and onions.

  3. Add back chicken and fry with red curry.

  4. Add coconut milk, chicken broth, fish sauce, and lime.

  5. Reduce to thicken. Add corn starch if needed.
