Tomato bean soup

Ingredients

  • 1 to 1 1/2 can of tomatoes, good quality if possible

  • 2 onions, diced

  • 1 tbsp garlic, minced

  • 1/2 to 1 can of navy or pinto beans, drained and washed

  • 2 tbsp tomato paste, or more

  • carrot (optional)

  • white wine (optional)

  • olive oil and/or butter, as much as you want

  • 2 cups broth

  • 1 cup milk and or cream, or more

  • lump cream cheese (optional)

  • Basil or other herbs

Directions

  1. Fry onions and carrots in oil and butter.

  2. Add garlic.

  3. Deglaze with wine.

  4. Add everything except the cream and herbs.

  5. Simmer until well cooked.

  6. Add dairy and herbs, and hit with a vitamix.
