12-14 lb turkey
carrots
onions
thyme
garlic

Directions
Cut the spine out of the bird. Tuck the wings under and push down hard to flatten. Trim excess and save.
Mix olive oil, butter, kosher salt, pepper, garlic powder, onion powder, and lots of it.
Lift the skin under the breast and thighs and cram the fat spice paste under. Let it sit for a few hours.
Oven to 450.
Oil a baking dish and put carrots, onions, thyme, garlic and a bit of water.
Put the bird on top and bake. Will take about 2 hours.
Fry turkey pieces and neck in oil, pretty hot. Add carrots, onion, garlic, thyme coarse chopped. Get a good browning going.
Once it’s good add 3-4 cups stock and boil basically till the bird is done.
Bird is cooked when breast 150 and thighs 165.
While resting, filter out lumps from sauce, and add all the pan drippings with some butter. Simmer and reduce.
