Uncle Keto's cheesecake (Uncle Tetsu's)
Ingredients
175g cream cheese (3/4 package)
3/4 cup heavy cream
3 eggs, separated
1 tbsp vanilla extract
1/4 cup coconut flour
3 tbsp powdered erythritol
1/2 tbsp baking powder
1 tbsp vinegar
salt
Directions
Preheat the oven to 350.
In a small pot on the stove, gently heat and melt the cream cheese. Whisk till smooth.
Remove from heat and mix the egg yolks, vanilla, salt into the cream mixture.
Sift your coconut flour, baking powder, and erythritol into the cream cheese mix. Whisk until smooth.
In another bowl, beat egg whites and vinegar until it reaches firm peaks.
Gentlty fold the two mixtures together.
Line a small pan (7 inch round) with parchment. Springform is best.
Place the pan inside a second pan of hot water.
Place in the oven and then immediately turn the heat down to 320. Bake for 40 minutes.
After 40 minutes, turn the oven down to 300 and let it cook for an additional 30 minutes.
Take out and let cool to set.
