Veggie Lentil Instant Pot Soup
Ingredients
1 large or 2 medium onions, diced
2 large carrots, diced
other vegetables (ex: green beans, cauliflower, diced) optional
3 cloves garlic, minced or crushed
1 small can diced tomatoes (fire roasted is best)
2-3 tbsp tomato paste
2 cups french (brown) lentils, dry
4-6 cups broth or stock
2-3 tsp dijon mustard
1 tbsp sugar
olive oil
smoked paprika
herbs (thyme, basil, parsley)
salt and pepper
vinegar (balsamic or red wine) to finish
Directions
Fry the onions and carrots in the instant pot with a generous amount of olive oil.
Add the garlic and tomato paste and continue to saute.
Add everything except the vinegar.
Seal and set to high pressure for 15 mins, with natural pressure release.
Add vinegar and water to thin it out if needed. Season as desired.
