Weeknight indian madras curry
Ingredients
chicken thighs, cut (optional)
1 package paneer, cubed and soaked in warm water
butter
onions, diced
1-2 tbsp garlic, minced
1-2 tbsp ginger, minced
1/2 tsp cumin seeds
2-5 tbsp madras curry paste, to taste
optional seasoning to taste, cinnamon/tumeric/masalas
sweetener
1 can rich coconut milk
1 cauliflower, cut into small chunks
vegetables, red peppers/peas/etc
1 tbsp corn starch, mixed in water
Directions
Fry onions in butter, with chicken if using.
Add garlic, ginger, cumin seeds. Add curry paste and optional seasonings. Salt and some sweetener.
Add coconut milk and cauliflower and simmer. Add red peppers, peas, veggies.
Add yogurt and paneer. Add corn starch to thicken.
