Wild rice and mushroom pilaf

Ingredients

  • Olive oil

  • 2 onions, chopped

  • 2 cloves garlic, minced

  • 1/2 c white wine, or less

  • 12 oz mushrooms, sliced (can use as many interesting types as possible)

  • Thyme

  • 1 cup brown basmati rice

  • 1 cup wild rice

  • 2 cups chicken stock

Directions

  1. Sauté onions in the inant pot with olive oil until brown. Add garlic for 1 minute. Then deglaze with white wine.

  2. Add remainting ingredients and stir.

  3. Cook for 30 minutes on sealing pressure, with a 15 minute natural pressure release.
