Wild rice and mushroom pilaf
Ingredients
Olive oil
2 onions, chopped
2 cloves garlic, minced
1/2 c white wine, or less
12 oz mushrooms, sliced (can use as many interesting types as possible)
Thyme
1 cup brown basmati rice
1 cup wild rice
2 cups chicken stock
Directions
Sauté onions in the inant pot with olive oil until brown. Add garlic for 1 minute. Then deglaze with white wine.
Add remainting ingredients and stir.
Cook for 30 minutes on sealing pressure, with a 15 minute natural pressure release.
