Zucchini fritters

Ingredients

  • 2 medium zucchini, grated salted and thoroughly drained

  • 1-2 egg

  • 1/4 c flower

  • 1/2 parmesan, grated

  • Parsley

  • Garlic

Directions

  1. Mix together, making sure not too dry. Squeeze out the zucchini or whatever you have to do to get it good and dry.

  2. Make balls or lumps with a spoon or by and.

  3. Drop into a pan of hot oil and fry till brown and cooked through.

  4. Do not crowd the pan.
